Island dishes are generally spicy and offer an unsual combination of flavours. Banana, cocnut, mango, and passion fruit are used to create marvelous sauces for beef, chicken, and fish. Green papaya, or paw paw is served as a tasty soup or as a delicate vegetable side dish. Stews and one-pot meals play a major role in the cuisine. Goatwater, a soup of stew made of assorted parts of the pig, are appetising dishes.
Halcyon nights on St. Kitts and Nevis are meant for strolling hand in hand on the beach or sitting on a terrace listening to the chirp of tree frogs and the crash of the surf. For something different try moonlight sail; some of the charter companies offer dinner, music, and a open bar.
